but hurry up  - i'm still cuttin up these peaches and the big man just came home with MORE CORN... i gotta pip pop to stay ahead of the wave....

While you lazy butts were lazing in bed, I was up at 5:30 to go to the Farmers' Market.  Bought me some blueberries and someone gave me 2 peaches and I'm making me a blueberry/peach cobbler....Eat your hearts out! 

It's raining cats and dogs here (finally) and we're supposed to go to a catfish cookout in 2 1/2 hours.  Going to have some fine pickin' and grinnin' - (but no moonshine - drats!)

Ok so all this peach talk got me moving.  I hit my farmers market as well this morning. I bought two cases and about 40lbs of tomatoes. 

So on the peach pie filling.  The only recipe I can find calls for something called clear jell. Never heard of it.  Can I substitute liquid sure jell or corn starch?

Gina - i totally chickened out on the peach pie filling. i found the clear jel at the local bulk food place. but then read and re-read and it just didnt seem to make sense to me. i usually dont put more than a shake of sugar in my pies and such so i just couldnt do it - and i really didnt want to deviate form the recipe and kill us all. apparently its the thickener that will do you in.

so this is what i did instead - i cooked down the peaches and made the pie filling like i normally do and froze it! ha! ok that takes care of that!

we are working on the canning right now and its still giving me fits.

we did the 'hot pack' method and ended up with mostly liquid. so that didnt work for us.. so now we are trying the cold pack method with a 10% sugar syrup -- and using fruit fresh.

i think i'm just a canning looser.. so if we dont get better results i'm just gonna cut 'em up and put them in the freezer

Wait, wait!  There may be hope for using up the peaches yet... well, it's a little bit different form.  The cookbook I got from the library today has a recipe for Buck Carver's Peach Beer and Betty's Pickled Peaches.  Let me know if you want the recipes.

Hey KC, I made zucchini chocolate chip muffins, oatmeal raisin zucchini cookies, and ........wait for it........ a peach/blueberry cobbler!!! lol

What can I say, great minds think alike!!!

OFG, I found a recipe that did not call for the gel which did not make sense to me.  Yes it had a ton of sugar, spices and lemon juice.  There was a ton of float and I ended up with two quarts of extra syrup.  Did not wok really well at all.  I am going to skip the pie thing.  We really don't do pies anyways. 

I switched back to jam.  I make low to no sugar jam depending on the fruit.  I think I have about 6 pints and 16, 1/2 pints.  For one batch I added 1 cup of the spice syrup but no sugar.  I though that might be a tasty jam. 

I need to move on to the tomatoes.  Maybe early tomorrow.  I am cleaning up the sticky mess first. 

And my feet hurt. 

Oh, I wanted to tell you.  I keifered and strained some heavy cream.  Taste almost like butter. droolin  I could probably strain it more but it's nice and thick.  I used it on my pancakes this morning. big_smile

Well, we had our cookout, so no cobbler for us today, but tomorrow for sure.  Yep, Lori, I had never thought of blueberries and peaches together until I overheard someone talking about mixing them today - then a good friend walked up and handed me 2 peaches just a few minutes after I bought the blueberries - that was a sign for sure.

I have finally run out of squash - at least until the new plants grow up, but I must admit zucchini, chocolate-chip anything sounds great.  Throw some nuts into the mix and I'm in heaven.  I've made squash pickles, squash relish, squash/cucumber/okra/green tomato  fried together - I'm starting to dream of squash.

And sorry OFG, I'll use my inside voice when you're hung-over...(She says as she tiptoes out)

Happy Saturday night everyone - pleasant dreams.  Hope my dreams are blueberry/peaches and not squash!

KC you can be loud today! whee! i'm back to pip popping around (as much as possible with The Warden still nagging me to sit down and recover from my sickness).

so we had a minor miracle today:

WE MADE IT TO CHURCH ON TIME!

i know - there was practically a round of applause and everyone looked at their watch wondering why the preacher was starting late b/c there was NO WAY we could have been on time! and now the earth has shifted off its axis. i know. we are to blame. sorry.

so at least we started the day with a laugh.

no malfeasance to speak up in the barnyard. it always makes us nervous when everyone is behaving....like what exactly are they doing out there, or what do they want???

Gina - thanks for your canning tally. actually it really helped b/c we ended with 16 pints (total) of peaches and jam/preserves.

i totally forgot about Pamona's Pectin which is a no/low sugar thing! so i just mashed some peaches and cooked according to the box's directions. i dont know how they are (no bumping/ touching yet!) but they are beautiful.

dont know how the canned peaches will be and we were kinda disappointed. but we saw that our peach packing abilities got better with each (small) batch.

we were glad just to make the cobbler filling and freeze it. sorry you didnt have good results either. the whole thing was just kind of a mystery. but its worth it to have some yummy peach cobbler and just use up the space in the freezer. besides, what am i gonna do with all these jars!

one great thing was that i ended up with a pint of peach juice/syrup which i just put in a jar and made my favorite non-boozey drink:

Peachy Mint Fizz:

mash together in a tall glass:
* a few mint leaves
* some peach syrup

add ice and:
* fizzy water

sit out and enjoy on the deck while you watch Poultry TV
