i've not heard that terminology before...

Beef chain? Ive also heard it called called butcher chain or butchers special cut. Since the butchers usually took it home. Most people dont want to deal with it. It's the muscle on the side of the tenderloin primal that pulls off because of the silverskin. Have to remove it to make steaks.
