    What are you fermenting today?

I usually make it in the bucket, and I don't transfer it until there is enough liquid to cover it. It takes several hours for the salt to pull enough liquid from the cabbage. At least if you just sprinkle a little salt on each layer. I would think that using more salt would speed up the...

    What are you fermenting today?

The recipe I use just uses salt and cabbage. I make it in a 2 gallon food grade plastic bucket. Shred 1 head of "head cabbage" (not Bucchu or Nappa Cabbage), and lay a thin layer in the bucket and sprinkle salt over it and repeat until all the cabbage is used up. Keep pounding cabbage down every...

    What are you fermenting today?

I started a batch of Sauerkraut, and a batch of Mock-Kimchi today, and I will be doing some Corned Venison soon. I've never done a lactic fermentation with meat before, so I'm looking forward to seeing what the venison turns out like!

    On the train...

An American soldier, serving in Afghanistan, had just finished several weeks of intense action in the mountains. He had finally been granted R&R and was on a train bound for London. The train was very crowded, so the soldier walked the length of the train, looking for an empty seat. The only...

    What are you fermenting today?

I'm working on a Mock Kimche project, and I was wondering if anyone knew if the whey from active yogurt is the same bacteria used to ferment Sauerkraut and Kimche? My veggies are cabbage (not nappa though, just regular head cabbage), onion, garlic, celery, bell pepper, and dried hot peppers...

    What are you fermenting today?

I don't have the recipe anymore, that was around 20 years ago. However if you Google "Journey Bread" I'm sure you will find some recipes. Today's project is Buttermilk Sweet Potato rolls. The first batch just came out of the oven. I use buttermilk because of the cultures in it and it works well...

    What are you fermenting today?

I remember my first time making an old "sourdough" type recipe, which is where I learned that you really SHOULDN'T add commercial yeast to such things.. My S.C.A. group at that time (White Buck Forest) was hosting Walt Wars. My buddy Ollie told me he had a Journey Bread recipe that was older...

SS projects, solar hot water design - Sunsaver's tech stuff

From what he says in the video he is just using dirt and water as his electrolyte. However I have no doubt that the mineral salts found in dirt can do the trick.. Of course this might also be the case with your above experiment.. I wonder if anyone had tried doing this experiment in a...

SS projects, solar hot water design - Sunsaver's tech stuff

Hi, This is Dragonlaurel's husband. She brought this subject up with me. I had never heard of this before, so I had to do a little research. From what I have read, I would like to make the following suggestions. First of all if you have a way of measuring the electrical potential of various...
