Tanks - I use 1/2 tomato sauce and 1/2 homemade sweet chili sauce that I can - recipe from the Ball Blue book - so it has onions and peppers and vinegar, sugar, and spices - like a pickling spice mix. It's yum!

But here's the recipe I use -and then change :p I do not put cheese on it, haven't tried the bacon, and it MUST be served with corn - that's just a family rule :D

Sometimes I put in in the crockpot to cook all day.

I just googled "sweet and sour cabbage rolls" and came up with tons of recipes, so I picked one with flavors I like.

I made chili yesterday and cornbread. DH actually liked the cornbread - and he hates cornbread. (I made it with all corn, no wheat flour, and with no sugar. And used lard.) I even bought a new cast iron pan to cook it in.

The chili turned out good, in spite of my fears about the beans. I think I'm going to can some kidney beans for the future though.

My crock pot is my best friend when it comes to dinner, I use it a lot. It's so nice coming home and not having to make dinner!

Today is crock pot Tamale Pie. :drool

Since I have to work tonight, I'm taking out a pre-prepped meatloaf for the guys to just stick in the oven with some baked taters & some kind of veggie on the side. Oh so easy for everyone!

Sloppy joes, sons favorite. Also got buns cheap and its easy since i work at 4:30.

Great thread, I'm full of ideas for my next big once a month cook a so many of these recipes look like they will freeze nicely! :)

Tonight we are having Tamale Rice Dish

brown together:
1 lb ground beef (we use bison)
1 onion, chopped
1 green and 1 red pepper, chopped finely
salt & pepper

add:
1 quart canned tomatoes, cut up in can (can also use crushed)
1 cup sweet corn
1 envelope taco seasoning (or your own taco blend, I use Epicure )
1/2 cup water
1 cup long grain white rice (we use brown)

Cover and simmer for about 20 minutes until rice is tender and has absorbed most of the liquid. Turn into casserole dish, sprinkle with grated cheddar, dot with sour cream, and serve with tortilla chips (home made are wonderful!)

Here's a recipe if you want to cook 'Breakfast for dinner' over the open fire... we usually eat this for breakfast when we're camping because we exclusively cook over a campfire :) The bacon fat keeps the bag from actually igniting.

Breakfast in a paper bag

Required:
Paper lunch bag
Marshmallow roasting stick
Campfire with hot coals and little flame.

Ingredients:
Per person:
2 strips bacon
handful of frozen hash browns (I use homemade ones I prep before we go camping)
1 or 2 eggs
salt and pepper

Instructions:
Lay bacon in bottom of bag.
Add potatos.
Add eggs.
Close bag by folding top 1/3 down, then fold that in half and in 1/2 again.
Poke through the folded portion with the stick to hold it above the fire.
Hold 5 inches above coals for 10 minutes (prop the stick up and just keep an eye on it)
Open a bag to check. If its done, tear the top off the bag or fold it down and eat right out of the bag. But, since the bag is greasy, you'll want to sit it on a plate or something other than the table or pants leg.
