Tonight we had riced cauliflower. It was a frozen bag of white stuff, some green peas, minute shreds of carrot and green onion. On the back was a recipe for fried rice. So I added fresh garlic and ginger, along with a scrambled egg. I chopped the last of the leftover pork roast and added that. It was good, if a bit underwhelming. I sure wouldn't want to eat riced cauliflower imitation rice forever. It was ok, but it ain't REAL rice!

Desert will be the last of the fruit salad. Later. Full on imitation rice.

We kinda enjoy the fake rice - mostly because we don't ever eat the real stuff - so to us it's pretty ok!

But, your dinner sounds like it was good!

I think it works better than regular rice in things like soup... doesn't get as soggy because you can add it at the last minute

:lol: Still cauliflower -- which I like -- but it will never make it for rice pudding. Just for example....:p Yep, cruel to mention such a creamy, delight when you are diet changing.

So, is eggplant on your Whole30? Of course eggplant parm is favorite but, I also like them cubed & saute with garlic & olive oil. Prefer over pasta but, also good "as is". It can be mashed and makes a nice spread/dip, also. Throw some other veggies in the stir fry -- tomatoes, yum. Good nutritionally.

Dang, I just want to PLANT things and we both have SNOW!! Mine is arriving today...same system you just had. Thanks. I'm gonna wear out the seed package if I keep shuffling them. The colored corn kernels are so pretty. :hide Minimum of 6 weeks before I can even get peas in the ground. :he :idunno I am in garden distress :caf

How sad is this? I cut cherry tomatoes for a BLT because they have the most flavor of grocery offerings this time of year. HAD to have a BLT. :lol: :drool

Roasted eggplant was an eye opener for me. I never thought they could taste THAT good! I had mine on pizza of all things. My grandmother used to dip slices in flour and egg before pan frying them for us. I tried that years later, but they tasted bitter. Wish I knew how she did it.

I was starting to think seriously about gardening myself, but right now my backyard is covered in snow, so I guess I'll wait too :(

I like to take eggplant and slice it in rounds, pre-bake it until it's soft then top it with a spoonful of jarred pasta sauce, parm or mozzarella cheese, maybe pepperoni or sausage - or no meat at all - and we call it pizza-ish. Pretty tasty to the diabetic hubbie who doesn't really get to eat pizza.

One of my favorites is Vinete, a Romanian "eggplant salad"
Ingredients
  • 2 medium eggplants
  • 1/4 cup olive oil, plus more if needed
  • 2 tablespoons lemon juice, plus more if needed
  • 1 small onion, finely chopped
  • 2 heaping tablespoons light mayonnaise, plus more if needed
  • Kosher salt and pepper
  • Dill, chopped, for garnish
Directions
Preheat the oven to 400 degrees F.

Pierce the eggplant skins in several places with a fork. Set the eggplants on a baking sheet and roast until soft and the skin is charred, 30 to 45 minutes, turning a few times for even roasting.

When done, cut off the stems and peel the eggplants. Cut a slit along the side of each eggplant and transfer the eggplants to a strainer for a couple of minutes to allow the juices to drain.

Finely chop the eggplants with a knife until they form a smooth puree. Add the eggplant puree to a bowl and stir in the olive oil and lemon juice until well-blended; taste and add more olive oil and lemon juice if desired. Add the onion and mix in the mayonnaise, adding more if needed. Season with salt and pepper. Garnish with dill and refrigerate for at least one hour to chill.

Soon it will be 3 weeks into this adventure -- how's it going?

Both of us are not craving sweets. THAT is a biggie! Chocolate is my downfall, sugar anything is DH's downfall. But now we aren't missing it like we were. We had leftovers tonight, porkchops, mustard greens, salad and grapefruit salad. For awhile, I was hungry and couldn't get filled up. Now I am satisfied on less. We both want bread. I was thinking about cornbread while eating those mustard greens! DH can tell the difference in how his clothe are fitting This is worth it if it can break my husband of being a sugar-holic.
