View attachment 6651 Was a first attempt @ h/m buttermilk.. Worked out o.k. I suppose. The biscuits really didn't fluff as I wish they would have. But were tasty never the less. Tweaked the gravy with sausage chunks to theme the flavor as well.View attachment 6652

Please help me cook this fatty bone in 4 pointer buck hind quarter. It's frozen solid right now. I just moved it to the refrigerator and will cook it next Saturday. Only one problem I don't know how to cook it properly.

I would like to season and smoke it over some cherry wood some, then move to the oven it finish it off. It's freaking huge and I dont want to waste any of it by not cooking it right. I mean I don't hunt, skin, clean & process for the fun of it. Please help me!

Thanks

Have you any curing salt? I would put in in a brine cure until next Saturday.
