Please explain this curing salt. What's it do for the meat?
Sodium Nitrate. It will drawl out the gameness of the buck meat as well as kill micro organisms. The meat is from the back half of the buck. It will add flavor as well there are combinations of herbs/spices/garlic etc to add to the brine as well. A zillion ways to cook venison. I prefer Doe meat. Not as much seasoning to mask the testosterone. We have a couple Buck hams in the ice box. Waiting for the mood to guide our ambitions.
Google "Lem Cure". it is a curing seasoning for game protein.

Last time my son was here, he asked for real fried chicken. He showed up Friday, his job shut down from Friday to Tuesday for Easter. So tonight we had a couple of Easter Egger roosters, double floured, deep fried, butter sautéed asparagus and rice a roni.

Roasted mutton shank, with roasted parmesan asparagus (in lots of butter), spicy curry gravy, and chopped spinach salad.
^^yesterday.

Tonight.... no supper. I was cooking most the day and we weren't hungry by suppertime.

Today a fresh cured Berk ham is smoking still. & driving the neighbors nuts (me too).
Yesterday was grilled-caramelized shrimp/mushrooms/onions & a side of green beans- Also smoked some fishies..
