Oh i totally agree on the freezing, was went more to dont buy canned or some store bought conch. And alot of restaurants try to pass other types of meats as conch. And for the first time definitely try fresh, so worth it.
For sure freezing works great, and yes in water is the best way if not the seeling bags. Most charters will package them that way to keep them "fresher" for the client.

Pretty much off topic but for some reason it came to mind. My son used to live in northern Florida. I went to go visit and for some odd reason we ended up in a bar because the food was good there. Well there was a band play and when we walked in the door they just stopped mid song. Then everyone turned around and.looked at us. It was very uncomfortable... We eventually made our way to the bar and the first thing the guy next to me said he was form "LA". I thought to myself boy this guy is a long ways away from home. Then my son explained to me that that "LA" means Lower Alabama and not Los Angeles California. It was a hick bar forsure, food was good though.

Oh, you guys are killing me with your fish! I can and do get lovely fresh fish here. I should get some sometime soon, I think. My favourite, that I haven't seen here yet, is Red Roman. Wow, just wow. Incredible flavour. My most "exotic" seafood venture to date was shark. It tasted soapy :\

SOAPY! EWW! it must of had the suds :lol: im lame!!

@CrealCritter bar food is the best in FL!! There is an Irish Pub across from my moms in the keys, AMAZING FOOD, and of course beer. And alot of bars around there are next to the docks so they buy fish off the captain's and cook up some good grub! And yes if your are not a local some of them can be quite odd walking into them its like you can hear a pin drop and everyone eye is on you....creepy.

Sorry about your tummy problems - but that looks absolutely delish!
It was! Sadly I couldn't finish it. I have this stress/tension sitting in my stomach, since this afternoon, I've been struggling to eat. It's so frustrating! I wish I was one of those people who eat more when they are stressed/tired.

I'm having goat in wine, with garlic, mushrooms & carrots. The taste if good, a touch bland for actual meat portion and let me tell you -- buy stock in ADOLPH'S. I'm packaging the meat but, it MUST have Adolph's added. Even when cooked to fall apart, the meat -- to me -- is tough. The tenderizer sure helps!! And, it is an all day cook. I'm thinking … G R I N D. Chili. Stuffed peppers, casserole, tacos, etc. :lol:

Granted, she was just under two. Younger is better, I'm sure, for this issue. A marinade first, also. Like overnight. Pressure cooker comes to mind. If you saw the Coffee thread, or FEMs journal, you know it was not a pre planned event & she's dairy.

Thinking -- I could have raised a steer and sent to butcher n these 2 years. :he :D

There is a possibility that you goat meat is tough because of her injury. I've heard that an adrenaline release can cause tough meat. Since she was injured that could be the cause. I found this:

Back in another life my first DH and I raised a calf to slaughter. When it was her time we couldn't get her loaded despite having fed her in the trailer for WEEKS! Somehow she KNEW something was up that day. So, I got my cowboy neighbor to rope her (after chasing her all over the pasture) and literally drag her in the trailer. Next day off to slaughter. Got LOTS of beautiful meat that was too dang hard to chew... it was an awful experience.

Yes this is so true. That's part of the reason why we butcher our own at home. And why DH won't take risky shots hunting!
