I've been struggling with this sulfurous vegetables component. 2 - 3 cups of sulfurous veggies.

I've learned that 2 garlic cloves = 1 cup of sulfurous veggie.

I'm planning to eat and count eggs towards my sulfur. I can add one hard-cooked egg to my daily salad! Maybe two.

I looked up conversion for fresh kale to kale powder. Says 4 teaspoons = 1 cup fresh. Seems implausible, but I don't have any better guidance. I would estimate 1/2 teaspoon. I will have to grow kale and measure before dehydrating and after dehydrating and powdering.

Sounds like a great experiment! Take X amount of leaves and dehydrate, then see what the amount is when dried. I wouldn't believe it unless I saw it with my own eyes either. Good luck with the new WOE!

I've been meaning to mention this fact, relative to your new diet. Since I had mom & altzhimers here for several years, the issues to PREVENT the same dementia problems were something I looked into rather deeply. Not where I want to go or be :(. Our brains do need transmitters to work and placque not to form and on and on.....well, certain things became obvious as helpers within this whole "brain" thing. :D ONE was that chemicals called "acetylcholine" was needed. Best natural food sources for this -- TA DA -- Pastured eggs (yolks), beef liver, grass fed raw dairy, cruciferous veggies, mushrooms, fish, garlic, onion ...

See anything there in that list which looks familiar??? :rolleyes: So, while you are working for other issues, you will be helping the ole brain function well, also...:celebrate Probably other things within the diet assists but, you are going "non-dairy". I am not. Love my fresh, raw goat milk!!

Just wanted to mention this while I "remembered" :lol:

I had a quart jar of dehydrated kale and ground it. Produced about 1/2 cup powder. It takes A LOT of kale to fill a quart jar! If I am conservative and say 8 cups raw kale = 4 cups dehydrated = 1/2 cup powder, I get 6 teaspoons = 1 cup fresh kale. So the 4 teaspoons might not be far off??? Depends on how many cups of fresh kale is really in a quart jar.

I bought foil 1# loaf pans for freezing individual servings of soup. They hold 2 cups. Now I can prep soup well in advance. I even froze some regular (carby) soup for DH. I'll re-use the foil pans over and over. They last for years if you're careful.

A lazy calculation today, estimated the cost of this batch of soup at $0.41 per serving. Squash from the garden, canned beets from Walmart $0.78, home-canned garden carrots, home-canned tomato juice, tomato paste $0.79, and a big can of diced tomatoes I guessed on the price. I used a lot of Italian herbs and spices so I guessed on their cost also.

My kids are starting to ask for salads at lunch time! :eek: I guess this modeling thing really works! I need to grow more microgreens and sprouts to compensate for using more leafy greens in winter. My grocery cost will go up a bit for giving them salads but it's worth it! :love

Here we go! I've had my last piece of bread, my last piece of gum, my last soda, last cookie. I start Wahls "for real" tomorrow. 31 days dairy free, and then dairy challenge.

I cleaned out my kitchen today. 3 paper grocery bags of unopened nonperishable food delivered to a food drive at the library. shortening, powdered sugar, almond bark, chocolate chips, corn syrup, molasses, evaporated milk, ramen, cream of mushroom soup, popcorn toppers, I don't even know what all was there. Stupid things I bought while daydreaming of holiday baking. I've been a sucker for that.

I still have carby ingredients - sugar, flour, rice, pasta, etc - for the rest of the family. But I took out all the "good" stuff that I would be tempted to eat in a moment of weakness.

I also have a stack of health and environment topic books from the library to keep my mind in a good place about resolutions and change in general.

I gave up on eating sea vegetables and bought tablets of spirulina, chlorella, and kelp. Chlorella is the most expensive (and worst smelling), and from what I'm reading spirulina and kelp are enough. I will not be re-ordering chlorella.

I am struggling with eating canned salmon. It has bones. Dr Wahls encourages people to get the salmon with bones and eat the bones. I was so grossed out the can of salmon sat open in my fridge for a week until I gave up and dumped it in the pail for chickens. Any tips for stomaching boney canned salmon would be appreciated!

I've also discovered that I like roasted sweet potato! For breakfast! Vaguely comforting like eating oatmeal. but it counts for a colorful vegetable. I'm very pleased to be able to add another veggie to my "not completely disgusting" list. :gig

I love sweet potatoes but not sure it qualifies so much as keto. I'll be trying to stick to 20 carbs a day. But I do love avocados...maybe I can work those into the mix. If I do intermittent fasting I can just skip breakfast, lol. That makes it so much easier!
