Jimmy Dean Sausage Copycat Recipe

1 lb ground pork (works well with TVP, ground chicken or ground turkey, too)
1 tsp salt
1/2 tsp parsley
1/4 tsp black pepper
1/4 tsp thyme
14 tsp crushed red pepper (use more if you like it hot)
1/4 tsp coriander
1/8 tsp oregano
1/8 tsp rubbed sage (use 1/4 tsp if you like sage sausage)

Mix and refrigerate overnight.
If you are using TVP and want to make up a bunch of patties to freeze, add 2 eggs and 1/4 c. flour. Refrigerate at least 2 hours. Fry in oil, freeze on cookie sheets then bag.

Thank you! I have tried sausage spice blends but they never taste right. I will give this one a try! I'm surprised there isn't fennel in it. Fennel seed is the "sausage" flavor we're used to.

Fennel is the ITALIAN sausage flavor that we are used to.
I don't think I have ever had breakfast sausage with fennel in it. But those may be the sausages that I don't like. Fennel is like an anise/licorice flavor. I hate black licorice, so I notice that flavor right away.

My breakfast sausage recipe doesn't have fennel. But it does have lots of sage and some brown sugar:)
