Old Fashioned Rhubarb (or Cranberry) Pudding Cake

This rhubarb or cranberry pudding cake is easy to make using fresh or frozen fruit. A simple hot water trick allows the cake to make it's own sauce while baking.

Use 2 cups chopped rhubarb or cranberries. If using frozen, let it thaw in the pan for a bit. Put into a 8x8 or 9x9 baking dish.

Batter:
3/4 cup sugar
3 T soft butter
1 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla
1/2 tsp almond extract
1/2 cup milk
1 cup flour
____
3/4 cup sugar
1 T cornstarch
_____
2/3 cup boiling water

Mix batter ingredients and pour over fruit. Mix remaining sugar and cornstarch and sprinkle over the batter. Pour boiling water over the top. Bake at 375 degrees for 45 min. You may sub a gluten free flour blend but bake 10 to 15 minutes longer.

Yum! Sounds good - but I've never even tasted rhubarb, lol. I do like cranberries in desserts though. :)

You have never had rhubarb??? Love Love Love Rhubarb. Of course, I am a Hoosier by birth so we could grow it real easy. I keep trying (live outside of Houston, TX) but no luck yet. I buy it in the grocery stores and then freeze it.

If you like cranberries you would like rhubarb.

Nope - never. I think I need to change that, lol. But, I do like cranberries so I'd probably like it. There's not much in the way of food that I don't like, lol!

I'm pretty iffy on rhubarb. My mom would make strawberry rhubarb jam, rhubarb custard (?) pies... I thought it was all okay with the jam being wonderful. The first time I had rhubarb pie at a family reunion here, husband's side of the family, I almost passed out. Sour, tart, terrible stuff. But that's how they were all used to it. I needed all the sugar to help deal with the tartness.
Hint: Don't gnaw on a raw rhubarb stem. Wretched stuff, I'm telling ya.

O dear...somebody skimped on the sugar. I always mix mine with sugar and cinnamon (I LOVE cinnamon). My husband didn't like it when we first got married. I made him a Strawberry-Rhubarb pie and he loved it. The next time I made it without the Strawberries and he ate every bit of it.
