Thought I would update on this thread. We bought what is called a Kyoto Brick maker. It is normally used for making bricks out of shredded newspaper for burning in stoves. It works great! surprising how fast you can turn out bricks with the little machine and its CHEAP!!!

I would just go with a jersey, breed her to an angus for beef calves. Then single milk her while she has the calf. You can use up an amazing amount of milk making cheese. People do not seem to realize it takes 12 pounds of milk to make a pound of cheese. Cheese yields can be better or worse...

It takes 24 pounds of milk to make that 2 lbs. of hard cheese. Overhead on a small dairy for that much milk could easily eat up half the cost for that quantity of milk. Especially if they have can't keep cows on pasture and have to get feed shipped in. Just a few things to consider.
Our best hope for weathering and recovering from this doesn't begin with government. It begins in our own backyard and the decisions we make daily. What we buy, what we don't, where we buy it from. Do we get into debt over our heads? Do we barter or trade? And the list goes on and on.
