I never peel or seed my tomatoes. I quarter them and cook them. If I need to, I run them through my victorio strainer, otherwise, I just use my stick blender and blend everything up in the pot. WAYYYYYYYYY easier - and I'm a lazy canner so any and all shortcuts that are safe are being used here.
