Yesterday I canned some Hot Dilly beans and some Banana and Jalapeno rings... Also, one jar of mixed hot peppers , they are a mixture of cayenne, black pearl peppers, and jalapeno's... I thought this would be good to keep on hand to put in chilli and such.

Mine that I canned looks fine.. however, I did take a little bit of the liquid while cooking it and dip a bit out and put it in a separate bowl and whisked in the cornstarch until smooth before adding to the rest of the mixture. It looked really good... I can't wait to make a pie with it now...
Yeah, I did think about canning it without any thickener. I'll see how this cornstarch does and if doesn't hold up good I'll go that way the next canning. Thanks.
Well, I went ahead and made a few quarts of peach pie filling and some blueberry pie filling as well. It looks fine but I'll have to make a pie soon and see how it turns out. If it does well I'll make some apple too.
What about canning them? I thought about dicing some up to put in soups and stews or to use on pizza's too and canning them but I have never done it. Has anyone else ever canned them like this before?
Has anyone ever used regular cornstarch instead of clear jel? I read somewhere that the only difference is that cornstarch just makes your food look cloudy but tastes the same. Any insight on this anyone?
