There are a lot of good hearty meatless dishes that are stick-to-your-ribs enough that nobody will care, in my opinion. For instance:

Honestly, I just mop with water most of the time. I sweep the floor real well, and then mop with water. And when it needs something more, on occasion, I use a (overpriced, but I'm a bit of a hippie) "Method" brand floor cleaner that's biodegradable and doesn't leave much of a film.

We don't really give gifts to anyone but family and our child's godparents... not out of any moral choice, just seems easier, and we've never had anyone else give us gifts... and besides, the gifts are just secondary to seeing everyone anyhow.

If you plan on using them fairly quickly, you could just make refrigerator pickles and not bother with the canning, and those could certainly be crisper. I don't know specifics (maybe someone else does?) but in my experience a batch of fridge pickles is good for maybe a month or so.
