made some buns just this weekend with my daughter (and my GF looking on making comments from the peanut gallery ;) ). Used a mix of flours, 50% rye, whole wheat, and buckwheat, and 50% all purpose. I don't have pics but they turned out wonderful, did some with cheese and onion, some just with...

The Mead Jelly is excellent, I made mine out of my oak aged chai, it was excellent, unfortunately some of the jars didn't seal as good as they should have and I lost some of them, but still well worth it.

You have to register to see the recipes section. Once you register and sign on you will see it. The chocolate mead does indeed have a chocolate flavour, its not strongly chocolate, just a sort of aftertaste. Chocolate cherry mead would be interesting. I am not sure that I posted my chocolate...

    Anyone make their own pasta?

I have a hand crank pasta machine and I love the pasta that cranks out of it. I've made pesto pasta and plain, it is far superior to anything you will find in the grocery stores. Lasagna noodles are silky and just amazing. I don't find making home made pasta to be all that more time consuming...

ya beer making equipment is pretty much identical to winemaking. In fact why not convince your father to make a braggot, a beer based mead. While most mead is closer to wine then beer really it can be fermented with barley and hops to make a honey beer which is more accurately called a braggot...

cubibs are a spice, as are casia buds, casia buds specifically are the unopened flowers of the cinnamon tree. Cubibs I can't really tell you much about. I would probably add some black tee just to get the tannins, but you shouldn't need much as the star anise and cubibs will have some. Yes it...

Oh and never be afraid to experiment, the great thing about mead, is even a bad batch can be fixed. too dry - backsweeten off flavour - try aging - cold distill - use as a cooking mead - turn into vinegar too sweet - allow to ferment some more, if...

absolutely, its available on my website as well but here it is: Now if I was to make this again I would not use sulfites, I prefer to let the mead naturally stop fermenting now as I can't stand the sulfite flavour, if it dries out too much just backsweeten.

SCA is the Society for Creative Anachronisms. It is an international organization that reenacts the middle ages. I myself am my local chapters Seneschal (president) and I can assure you is is a blast (and very geeky). I make mead and share it with my fellow SCAdians quite often. I live in a...

I am new to these boards, this is my first post. I've been a mazer (mead maker) for a couple of years now, and I love the stuff. It is so versatile and every batch is so very different. I have a 5 gal batch of bone dry chocolate strawberry mead clarifying in my kitchen now, a gallon of garlic...
