    A lot of people are surprised when I tell them that actually, lard IS one of those "healthy fats" everyone gushes about. Lard is about 50% monounsaturated, which is why it stays kinda soft at room temperature.

    I render lard and tallow when I can get the fat. Mostly I render schmaltz from the chickens. I used to use coconut fat and olive oil a lot. Now, I only use olive oil to make salad dressings.
