"Can" we maybe post up some good recipes for canning? I am looking for something fairly easy and it can be a pressure canned recipe too. Small sizes are ok too. I have been cheating and using the pre-packaged sauce mix made for canning. It's not bad, but not amazing, and a bit bland...
Well, it's been slow on the canning front... Between classes for foster-care, my wife's car blowing a motor (and my Jeep breaking down on the way to pick up a new motor!) Well, not much has been done as of late!

Well, tonight's batches... 13 quarts of peaches! That was a lot of work peeling, cutting and prepping! It's 1:30am and I am tired!
(I also washed, sorted, and bagged 24 cups of blueberries! (16 cups bagged in 4 cup measurements in the freezer)

Quick help here... I canned 13 quarts of peaches tonight and what I did was when I hot packed them, I used the same sugar/water mix for that and new fresh sugar water for the canning. When all was said and done, I have a heavily flavored peach sauce, yet thin. I am thinking if I simmer this...

Yea, super careful with these peaches, that is why the boxes were made. I have a second layer loosely spaces on top of the first layer so they have air flow. This morning the kitchen has such a wonderful peach smell! :D

Don't forget how easy it is to can left over chicken broth... I mean, it's almost a free by product of a chicken dinner, right? I can think of many of times we just tossed it out because we did not want to deal with it. Now that I can, can this way, it makes it so much more useful.
Today's batch was:
4.5 pints of strawberry-rhubarb jam
4.5 pints of blueberry Jam
5.0 quarts of chicken stock (In the pressure canner right now) ;)

You have to love the soup part... Cook a nice chicken dinner, pick it almost clean for your meal and sandwich leftovers...
Here is a question, for those of you who can them... how many packages of seed do you plant per rotation to get enough harvest to fill say, six or seven quarts? This is my first year canning and I seriousl under-planted them so I can max out at maybe 2 quarts at a time.
