Canning is great! I have a day off today and my car is in the garage. I was grumbling to my DH that all summer I had something to do with canning. I have nothing today. Now I have to clean!
Keep an eye on the thrift stores. Now people will be donating canning supplies. Hard to believe!

Never butchered...probably never will...took ours to a Amish farmer near us . They used to be $2.50 a bird but they go up a quarter a year. $3 this year. Best $3 we ever spent. Do great work. Very pleased. The only downside is you correspond by mail. They do them when they are ready. Works out...
Just canned 5 birds. Made 6 quarts. The back, wing tips and neck business made a delicious broth. Will can that tomorrow and will probably have 8 quarts of broth. Really cooked down. Yum. Will have to wait to eat the canned chicken, when I get over the yuck factor!
Having the Amish butcher 20 meaties this week. Thinking of canning several. Still torn if I should do them hot pack in cut up pieces or cold pack. Anyone canning chicken ?
Today I canned 4 pounds of dried bean. Ended up with 16 pints. Added a little ham, onions, molasses and salt. They look great. Had extra ham so made a pot of pea soup....bonus!
