So back before I decided to start cutting alot of the garbage out of our diet we bought a 25 lb sack of white rice. I don't use rice very often....for stir fry and mexican style rice that is pretty much it.

Anyone have an favorite rice recipes to share....I would like to start using more rice since I have it, although I know white rice is a no no!

I use it in my chicken soup and we have it along side of eggs in the mornings, we also make "dirty rice" with ground deer meat. I am also using some in my homemade, canned dog food this year.

Red beans over rice, spanish rice, stuffed peppers, rice pilaf, gumbo, etc.

I would never fritter it away- if you vacuum pack it, it keeps forever. And in an emergency it is something that supplies calories with little effort. A good prep item.
You can throw it into any soup just about to add a little to the mix, you can pre-cook it and freeze it for fast meals, you can put it into bags for microwaving heat packs, I have old pitchers around with rice in it to hold knives instead of regular knife holders. It's great animal food- I had a dog once that lived on rice and chicken for a year due to health problems.

Fried rice is fast and easy way to use left overs.

I use it in my salt shaker to absorb moisture! Of course, this would be a slow way to get rid of 25lbs of rice...... :p

How about rice pudding? Or grinding it to make white-rice flour for gluten-free recipes?

Left over rice is perfect for fried rice.
My basic recipe is to take a little oil and saute up some finely chopped garlic, ginger and onions in oil. Then push that to one side and fry up a beaten egg or two. Break up the egg in to strips or pieces, Then I add a little salt and stir fry with whatever veggies I want- usually small pieces of carrots, bean sprouts, peas, greens, etc. Then add a half cup or so of either water or chicken stock (stock is much better.) At this point you can add small chunks of whatever left over cooked meat you have if you want. Stir it up and add maybe 4 to 6 cups (?) left over rice with a teaspoon of sugar mixed in, breaking up the rice chunks and stir fry til your happy with the dryness. Top with some cut green onions.
As you can see, it is just really a basic idea to which you can add or leave out whatever you choose or happen to have on hand. the taste punch comes from the ginger, garlic and onions in the beginning. So you make up whatever you want of those- I like lots of garlic and onions. And I tend to use soy sauce instead of salt but that's just my taste- usually it doesn't have soy in it.
