I know it's a bit late in the season for this, but thought I'd put it out there anyway in case anyone did a search later. I came across it looking for recipes for Christmas baskets.

Acorn Pickles

Similar in taste to bread and butter pickles only with squash instead of cucumbers

Peeled, seeded and cubed acorn squash (about 2 medium) 6 cups 1.5L
Red peppers, cut into strips 2 2
Sliced onion 1 1.2 cups 375 ml
Salt 1T 15 ml

Granulated sugar 2 cups 500 ml
Brown sugar, packed 1/4 cup 60 ml
Mustard seed 1 1/2 t 7 ml
Celery salt 1/2t 2 ml
White Vinegar 1 1/2 cups 375 ml


Combine squash, red pepper and onion in large bowl. Sprinkle with salt. Stir gently. Let stand for 1 hour. Drain

Combine both sugars in large pot or dutch oven. Add mustard seed, celery salt and vinegar. Heat, stirring often until boiling and sugar is dissolved. Add squash mixture. Stir gently. Bring to a boil. Boil for 4 minutes. Fill hot sterilized jars to within 1/2 inch (12mm) of top. Place sterilized metal lids on jars and screw metal bands on securely. Process in boiling water bath for 10 minutes. Makes 7 half pint (1 cup, 250 ml) jars.

Thanks for the recipe! I have a ton of acorn squash. I love it and the rest of my family will not eat them. This will come in handy.
