Apple Cake - good for dessert or breakfast

Apple Cake

Vegetable oil or cooking spray
1 T all purpose flour
6.75 oz (1 1/2 c) all purpose flour
2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
3/4 c sugar
5 T softened butter
1 tsp vanilla
1 large egg
1/2 c milk
1 c finely chopped, peeled apple (about 1 med)
1/2 c raisins
1/4 c chopped walnuts
Powdered sugar for topping

Preheat oven to 350 F.

Coat a 9-inch round pan with oil and dust with 1 T flour.

Put flour, baking powder, salt and cinnamon in a bowl, stir with a whisk.

Put softened butter and sugar in mixing bowl and mix until well blended. Beat in vanilla and egg.

Add flour mixture alternately with milk, beginning and ending with flour mixture.

Fold in apples, raisins and nuts.

Bake for 30 minutes or until a pick inserted in center comes out clean. Cool 10 minutes in pan on wire rack. Remove to plate. Sift powdered sugar on top of cake before slicing and serving.

thats what i'm takin' about....

our grandma has a similar recipe thats heavenly..and i needed to use up some buttermilk last week and found one that uses buttermilk instead of milk.

yay apple cake!

Two other things I like for both breakfast and dessert are bread pudding, and rice pudding. Now I have another one to add to the list. Thanks!!!
