Best Way To Store Chocolate Long Term...??

If i wanted to store some chocolate for the longer term, whats the best method...? I'm thinking maybe the fat content in chocolate would not work well with , say...storing chocolate in buckets with mylar bags and oxygen absorbers, is that right..? Will i have to refrig. or freeze if i want to store away some chocolate long term..? What are my options...? thanks..Kevin

So far, body fat has worked the best for me--darn near eternal! :D

I was gonna say...my stomach is a great long term chocolate storage container...LOL

I am hooked on the 85% cocoa. Never lasts very long though.

Freezing should work.

I hear freezing is the best way, but to double up on packaging as the chocolate will take on freezer odors.

Best way here is at someone else's house!

I don't think you can store it very long-term without it losing quality. I was just reading that you wrap it very tightly and keep it at room temperature, not cold, and you might keep it a year. That was for baking chocolate, in the latest issue of Cook's. Personally, I will eat the chocolate even when it gets that whitish film on it from being stored too warm or cold.

My sister stored at room temps once.....and when she cut into the bar, it was hollow and filled with tiny little worms and white webbing, like spider webbing! :sick

We've stored baking chocolate in the pantry in quart wide mouth canning jars for an indefinite amount of time. We were in a rental house and they had real issues with bugs.

Baking chocolate will develop a bloom after a while, but it is still useable.

Seriously, DuppyDo, I store it in my freezer. Not only does it make it harder for me to graze on it, but it lasts a LONG time that way when packaged in freezer containers, definitely a year.
