Brown Rice & Cranberry Salad

4 c cooked brown rice
1/2 c diced red onion
1 c diced celery
1/2 c dried cranberries
1 c grated carrot
1/2 c balsamic vinegar
1 - 2 T sugar
1/2 c sliced almonds

Combine rice, onion, celery, and cranberries in large bowl (or the pot the rice was cooked in). In a separate bowl, whisk together the vinegar and sugar. Pour over rice mixture and stir well to coat all ingredients. Stir in almonds. Serve.

I used some the last of the "on sale" cranberries I dried in the dehydrator last year. We really like this salad, sylvie. Hope you find it a keeper.
