Freeze my home made Mozz cheese?? I need to make a lot...but only can do a gallon of milk at a time, not a big enough pot. So, can I freeze it and it still be "good" later???

Frozen cheese can change texture. I find that when you shred it first, it stays closer in texture and usability to fresh. Now this is with store bought. Not sure about homemade.

I freeze a lot of my homemade cheese and it works out just fine, especially if you will be cooking with it.

That's what I intend to do, freeze and cook with it later. We don't eat a lot of cheese, really....but we don't drink a lot of milk either, and 3 qrts a day is a bit much for us. :p
So, now I can make and freeze some mozzarella cheese! Whoot!!
