Canned Salmon Recipe?

Does anyone know how to can salmon? My husband salmon fishes on Lake Michigan, so we have a lot of salmon and he wants to try and can some. Any help would be appreciated!

My 1977 Ball canning book says:
Dissolve one cup salt in one gallon water to make brine. Cut fish into jar-length pieces. Let stand 1 hour in brine. Drain 10 minutes. Pack into hot pint jars, skin side next to glass, leaving 1 inch head space. Adjust caps. Process 1 hour and 40 minutes at 10 lbs. pressure.

Just remember this is a low acid food and must be processed in a pressure canner. They say you can not use larger jars than pints. You also may have to adjust for altitude. I would freeze it given a choice, easier and safer.

Thanks, we will probably give it a try. We freeze all that we don't plan on eating right away, but we thought we might try some canned. Thank You!
