canning chicken broth...help!

So, after butchering 23 chickens...needless to say I had a very large pot of "extra parts" I cooked them up, then canned the meat. Now I have this pot of broth. I tried canning one jar , along with the meats. When I pulled them out...the meats were fine...however, the jar of broth...freaked me out! It would do this big bubble, make a wierd noise, then release pressure!! Like pssshht! and spit. I threw a towel over it for fear it would explode in my kitchen. After about an hour, I checked on it...and it sealed but..it just freaked me out. Now, here are my questions.
Do I not need to process the broth as long as I did the meat?
Should I have removed the fat from the broth? If so...why?
help!! I have this pot of broth, I NEED to can...I dont have freezer room.
I want to do pints....so how long to pressure can them?

My book says 20 min for pints, 25 for quarts.

I leave some of the fat on the stock, but not all. I usually skim the fat and store it separately....but I haven't had enough stock from home raised birds to can yet, so there is a lot of fat on the commercial birds.

I leave the jars to cool in the canner for an hour or two. They can hiss and spit, so it is safer. I've canned a lot of broth, since I make all that catfood and I have a lot of bones to work with, and it is SO worth it!

Thanks Free....20 minutes. Got it. I will try another batch today....and see how this works. I think leaving them in the canner is a great idea...im off to the kitchen. ;)

hey i had the same freak out!

and yep its normal.. they can sit there and "blub" for a couple hours. i ran and hid when mine did that
;-)

i did a buncha quarts.. but some of mine didn't "take" and i'm still not sure why not.. so they are in the fridge. i actually had one explode IN the canner and i was really mad - all the broth gone to waste (glass was broken).

i dunno... this canning thing still eludes me....

Your pressure canning these right? When I did mine they said to allow the jars to cool completely in the canner. So I did not have any of this on the counter. Maybe it happened in the pot. :idunno I guess if you have a lot to do letting them sit isn't really an option.
