Cookie recipe staples

Would anyone like to share a cookie recipie, for good cookies, I'm going food shoping tomorrow and I want to get the staples to make sweets rather than buying premade cookie dough or a package of cookies that might go bad or get wasted. I'd rather just make something sweet when everyone wants a sweet something. Am I making sense? Also, say I whip up a batch of cookies, but don't use all the dough, can I freeze whats left and how long does it last? Thanks in advance!

This is a good old-fashioned very sweet, but very GOOD and EASY, one:

No-Bake Chocolate Specials

3 C rolled oats |
6 Tbsp unsweetened cocoa powder | mix these 3 and set aside
1 C unsweetened shredded coconut |
2c sugar |
1/2 c milk | bring to boil, pour over oat mix (above)
1/2 c butter |
1 tsp vanilla <-- then add vanilla and stir it all together really well.

Drop by teaspoonfuls onto waxed paper lined cookie sheets, and let cool fully. Store covered at room temperature. Can be frozen. Although in our house they never last long enough to freeze. Makes a lot.
