Creamed Corn using Dried Corn

ETA: This recipe was posted in a question about processing corn. I have posted it separately, as Reinbeau has requested all recipes posted inside threads and journals should be posted.

Creamed Corn
1 c dried corn
4 c boiling water
2 tsp sugar
1/2 c milk
1 T flour
1 T butter
salt & pepper

Add corn to water and let soak for 30 minutes. Simmer corn until tender (may take up to 1 hour).

Drain*. Add the remaining ingredients and simmer for 5 to 10 minutes, until all ingredients are well mixed and hot. Stir frequently to prevent scorching.


*I save this water to start a veggie stock for future use.
