Crockpot roast

This is a yummy roast for the crock pot

3-4lb roast (this is good with beef or pork)
3 slices of bacon cut into 1 in pieces (use scissors)
8 cloves of garlic 6 of them quartered and the rest mashed slightly with a knife
1-2 tsp. of sea salt
1/4 c olive oil
1 tablespoon smokey paprika (I use less)
1/4 c chopped parsley
1 tsp oregano (or to taste)
1/2 tsp thyme (or to taste)
1 tablespoon red wine vinegar

Using a knife slit deep holes in the meat, insert the garlic and bacon. (so yummy I promise)
mash garlic and salt together first, then add paprika, parsley, olive oil, and vinegar.
rub this over the meat
put in the crock pot and cook on low for 7-10 hrs or until done.
If you like you can add 1/2 glass of red wine an hour before the roast is done ( I have not done this)

This paprika is not the relatively bland stuff you get at the local supermarket. It's more a cousin to traditional Hungarian paprika. What makes all of these varieties distinct is the deep smoky flavor they share.
