I have a container of ricotta cheese, a small brick of fresh mozzarella cheese, and some Parmesan cheese (both the mozzarella and Parmesan are in the fridge) plus I have a little shredded cheese is need to use up. I'm looking for a low carb dinner idea that I can use all those cheeses in that is also doesn't include a lot of starch.
I know, I know I'm asking for a lot but if someone could assist me I would greatly appreciate it.

Do you have any veggies? You could try making veggie lasagna. Use a layer of veggies instead of pasta? I like my meatballs, cheese and marinara without pasta. I particularly like it served over thinly sliced raw or lightly steamed green pepper.

I was thinking a bit too late, that you can make a nice quiche with that as well. Add some onions and eggs and something like crushed Ryvita or Provita biscuits for the base.
