This time of year I am bound to have a kettle or 2 on the stove soaking beans any given day of the week. What's not to love about beans? They are SO healthy, so cheap, so delicious, so versatile, and they give my young children endless short moments for amusement.

Here are a couple of my favorite bean recipes. I'd love to see yours!

Dawns Bean Soup
48 ounces white beans with juice (6 cups)
2 cups chicken broth
2 cups thick and chunky salsa
3 chicken breasts, cooked and chopped

Mix together in pan and warm to desired temp. Sprinkle with mozzarella.

Spicy Bean Salsa
1 (15 ounce) can black-eyed peas
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (4 ounce) can diced jalapeno peppers
1 (14.5 ounce) can diced tomatoes, drained
1 cup Italian-style salad dressing
1/2 teaspoon garlic salt

In a medium bowl, combine black-eyed peas, black beans, corn, onion, green bell pepper, jalapeno peppers and tomatoes. Season with Italian-style salad dressing and garlic salt; mix well. Cover, and refrigerate overnight to blend flavors.

Three Bean Salad
3 cans green beans, drained
3 cans wax beans, drained
3 cans red kidney beans, drained
3 cans garbanzo beans, drained
3 cans black beans, drained
3 red onions, chopped
3 green bell peppers, chopped
2 cups red wine vinegar
2 cups white sugar
2 cups vegetable oil
2 t ground dry mustard
1 t dried tarragon
1 T and 1 t dried cilantro

In large bowl, layer beans. In saucepan, pour remaining ingredients. Cook and stir over medium heat until sugar dissolves. Remove from heat and pour over beans. Stir until coated. Marinate a few hours in the fridge, stirring occasionally. Serve.

Cornbread Salad
1 pkg. cornbread (or homemade 8x8 pan)
1 can green chilies
1 pinch sage
1 pinch cumin
2 cans corn
2 cans black beans
1 green pepper, chopped
1 red pepper, chopped
1 red onion, chopped
1 lb bacon, fried, drained and crumbled
shredded cheddar cheese
1 cup Mayo
1 cup sour cream
1 pkg ranch dressing mix
tomatoes, chopped (optional)

Make bread according to directions, adding chilies, sage and cumin. Cool. Crumble. Drain and rinse corn and beans. Mix all veggies. In 9 x 13 pan, layer cornbread, vegetables and back. Repeat layers. Mix Mayo, sour cream and ranch mix. Spread over top. Top with cheese, then chopped tomatoes if desired.

Minestrone
1 lb ground beef
2 cups coarsely chopped onion
1 cup sliced celery
cup chopped fresh parsley
2 garlic cloves, minced
cup oil
5 cups beef broth
2 cups chopped fresh tomatoes or 16 oz tomatoes, cut up
15 oz tomato sauce
2 cups coarsely chopped cabbage
1 cup sliced carrots
2 tsp dried basil or Italian seasoning
tsp salt
tsp pepper
1 cups sliced zucchini
1 cup cut green beans
1 can kidney beans, undrained
1 can garbanzo beans, undrained
4 oz uncooked spaghetti or noodles
1 cup grated Parmesan cheese

Brown beef and set aside. In kettle, saut onion, celery, parsley and garlic in oil until tender. Stir in next 8 ingredients and bring to a boil.

Mexican Casserole
lb ground beef
1 cup chopped celery
cup chopped onion
1 small green pepper, chopped
1 garlic clove, minced
2 cups cooked rice
1 can (15 oz) chili con carne w/beans
1 can (14 oz) Mexican-style stewed tomatoes
2/3 cup mayo
few drops hot pepper sauce
tsp salt
1-2 cups shredded cheddar cheese
corn chips

Cook first five until meat is browned and veggies are tender. Stir in next 6. Top with chips and cheese and bake at 350 for 35-45 min.

Cannellini Garlic Soup
Serves 4

2 c vegetable stock
8 large cloves garlic
1 med onion, coarsely chopped
4 c cooked cannellini or other white bean (2 x 16 oz cans, drained & rinsed)

In large saucepan, combine stock, garlic and onion. Bring to boil over high heat. Reduce heat and simmer until veggies are soft, about 20 minutes.

Add half of beans to pan. Using immersion blender, puree soup until smooth.

Return soup to med heat, stir in remaining beans. Cook about 5 - 10 minutes until hot. Serve with crusty bread.


Hummus
2 cans (15 oz each) chickpeas, rinsed and drained (or equivalent home cooked, canned)
4 - 8 T extra virgin olive oil
2 cloves garlic, peeled
1 marinated roasted red pepper
2 - 4 T tahini paste
Kosher salt
Montreal Steak Seasoning
Hungarian Paprika

Mix together in food processor. Serve with pita chips, crackers, breads, or veggies. Makes a good sandwich filling.

mmmm.... hummus! And that garlic soup sounds so good and easy!

I forgot one of our simplest ways: Black-eyed peas (or pink-eye purple-hulled peas if you can find them) over brown rice with butter, salt and hot pepper-garlic jelly on top. What a meal.

Thanks for the bean recipes....I am new to bean cooking (relatively) and I do not have many recipes that I can say we love :rolleyes:

I will have to give some of those a try as I am hell bent on using more beans!

I can't find my recipe for it right now, but I first got into beans on my husband's aunt's 5-bean casserole. My brother, still not a bean fan, refers to it as 5000-bean casserole :)

Basically, brown 1 lb of meat (any, except fish) with about 1/2 lb chopped bacon, 3 cloves garlic and about 1-2 huge onions. When browned, drain any fat. Dump in about 6 cans (or equivalent in home cooked) beans of your choice. The recipe calls for baked, black, kidney, butter and lima. Just choose your favorites. Then put in about 1/4-1/2 cup vinegar, 1-2 cups ketchup and about 1/2 cup brown sugar. Adjust all to your own taste. Bake about 1 hour at 350 or until bubbly. Very yummy way to get into beans.

I love all these recipes! I eat alot of soup...like it was said in another thread, I always have a pot going and just add to it all week. I also eat alot of beans. But like I said, these recipes are great! Thank you all!

This is the recipe we use...great for picnics or for winter meals.

Bean Casserole

Serves 10-12 as main course. Home canned beans work well in this, using a pint jar instead of a can.

1 to 1 1/2# pork sausage, browned
1 can chili beans, drained
1 can baked beans, drained
1 can kidney beans, drained
1 can green beans, drained
1 can yellow wax beans, drained
1 can lima beans, drained

1 can tomato soup
2 medium onions, chopped
1 cup celery, chopped
2 Tbsp prepared mustard OR 2 tsp dry mustard
1 cup brown sugar

1 can tomato paste
1/2 to 1# uncooked bacon strips

Preheat oven to 350F

Put all beans and browned sausage in a 5 or 6 qt Dutch oven or casserole dish. Mix soup, onions, celery, mustard and brown sugar together and stir in with beans. Top with tomato paste and bacon strips.

Bake for at least 1 hour, may be baked longer.
Alternately, put everything in an electric roaster set to 350.

You could omit the meat, or substitute your favorite ground meat for the sausage. It is wonderful with thick cut homestyle bacon. This recipe is easily doubled, if you need to feed more people and is very good for picnics. Can be served hot or cold, but I like it best hot. My aunt-in-law used to make this in her electric roaster. This recipe came from Towmotor Corp Employee Favorite Recipes c1977.

I love beans, although the ones I made last night didn't turn out. The beans might have been way too old. They never softened up properly.

I'm getting ready to soak some fava beans. I often make them into a salad.

After my bean thread a while ago I bought 8 kinds of canned and dried beans to try in various recipes but every time I go to make something I look at the picture on the cans and can't bring myself to open them. I may have to drop them off at the food bank because the dog won't eat beans either. Some of these recipes look good and may have to try them without the beans.
