1+1/2 c (185g) plain flour
1/2 tsp salt
2 T sugar
7g instant yeast
1/2 c (125mL) warm water
1 egg
2 T melted butter

Topping:

3 apples (I used granny smiths) peeled, cored and chopped.
2 T brown sugar
1/4 tsp cinnamon
1/4 tsp nutmeg
60g butter

(I also used a little extra brown sugar.)

1. Mix dry ingredients, including yeast, in a large bowl and make a well in the center. Beat egg lightly and combine with melted butter and water. Pour liquid into dry and mix well for 3-5 minutes to form a thick dough.

2. Spread dough evenly in a greased 9 inch spring form pan. Cover and leave in a warm place to rise until doubled in size. Mix the apples, sugar and spices, spread evenly on top of dough, sprinkle a little extra sugar on top and dot with the butter.

3. Bake in the center of a preheated 200*C (400*F) oven for approximately 30 minutes or until cooked. Leave to stand for 10 minutes before removing from spring form. Cool on a wire rack. Serve warm with custard, or vanilla ice cream.
