On a mission
I just read Glorious One-Pot Meals by Elizabeth Yarnell. All of the recipes are made to go in one pot -the Dutch oven. Unlike a lot of crock pot or one-pot type meals that I see, these are not stews, soups or chilis. They all have meat, a carbohydrate, and lots of veggie and flavor.
Here's one that's going to be a keeper for our family!
Bahamian Chicken:
1 tsp cumin seeds (I used ground)
1 to 1 1/2 lb chicken breast or thighs
salt & pepper
4-8 garlic cloves chopped
2 medium potatoes (I used sweet potatoes) cubed
1 red or orange bell pepper
1 small yellow summer squash cut into chunks
1 head broccoli florets
6 T rice or wine vinegar
6 T orange juice
1 tsp oregano
1 tsp paprika
1/2 tsp allspice
1/2 tsp red pepper flakes
Preheat oven to 450* (apparently this must really be within 10* plus or minus or something bad happens )
Spray or grease lid and inside of Dutch oven.
Sprinkle cumin in bottom of pot.
Place chicken in pot and lightly season with salt and pepper; spinkle with garlic.
Put potatoes on top of chicken, then layer on the veggies. (I didn't have broccoli so I subbed cabbage and turnips.)
In a small bowl, mix liquids and spices. Pour over the veggies.
Put the lid on the pot, and bake for 45 minutes, or until 3 mniutes after the aroma of a fully cooked meal escapes the oven. Serve immediately!
Ahhhh..... I feel like I just went on a mini-vacation!
