I was wondering what methods everyone uses for storing their home made fruit leather. I made a small batch but I would really like to do something more bulk to save time and money. I wasn't sure what the shelf life is and/or the best way to store it for long term. I figured freezing would work but would that make is a weird texture when you thaw it? Thanks
 
I store all my dried fruit in jars with tight lids, on a cool dark shelf, and they are just fine. I don't live in a humid climate though. If you do you might want to seal them up somehow. If you have a foodsaver machine you can get the gadget they sell for sealing jars (about $10), and that would keep moisture out.
 
We've always stored ours in canning jars as well. We tried freezing them once but they seemed to dry out even more and were tough to chew then.
 
Jars with rubber rings and snap down lids. They stay fresh and yummy.
 
Sheets of dehydrated pureed fruit--a very yummy snack :)
