Green gage plums

Had a guy offer for us to pick his green gage plum tree. So we have lots.

Any ideas, besides eating--(my hubby and kids love them), but wondering if any one has experience with this type of plum

I found this little bit of info in an old Ball Blue Book. I will quote it. "Green gage plum and other meaty plums are better for canning than the more juicy varieties". I didnt know there was a difference in the meatiness / juiciness of plums. Learn something new everyday. :/
