grinding grain and gluten intolerance?

so I used to think that I was gluten intolerant, or maybe had celiacs...but I have been tested (in a time after I began raw milk, which has the necessary things in it to digest grains...pasturized apparently doesn't)

and well, I tested ok, and my symptoms were much better than they had been...sometimes symptoms come back though...

anyhow anyone go through similar things and find that fresh ground wheat was fine?

wondering really if I should buy a little or a lot?
(not really a big decision really just sort of wondering if fresh has been easier on the body...maybe because it was fresh...I don't know?)
