Homemade Wheat Thins

Serves 6

1 3/4 c Whole wheat flour
1 1/2 c White flour

1/3 c Oil emulsified in blender with 3/4 tsp salt and 1 cup water

Mix dry ingredients, add oil/water mixture. Knead as little as possible.
Make smooth dough then roll as thin as possible on un-oiled cookies sheet
(not more than 1/8 inch).

Mark with knife to size of crackers desired, but do not cut through.
Prick each cracker a few times with fork. Sprinkle lightly with salt or
onion salt as desired.

Bake at 350 F until crisp and light brown for 30-35 minutes.

When I make crackers I have been using a pizza roller to cut them... it should work here as well. Cut them on the baking sheet to avoid having to move the thin cracker dough.

My DS can eat a box of Wheat Thins at one sitting. I think I'll try these on him.

Have you ever added Mrs. Dash or black pepper to these? I buy the cracked black pepper triscuits sometimes.

Keep in mind that your DS might not like these at first, since wheat thins are very high in sugar.....didn't used to be, but they have raised the sugar content steadily over the years. That is why I stopped buying them some years ago, and when I eat one at a party, I am amazed at how sweet they are, not like a cracker should be, more like a cookie to me!

I will try this recipe with all ww flour, can't wait. I wonder if the method of emulsifying the oil is a key....must be, or they wouldn't have you bother with it.

No leavening? Not baking soda or baking powder?
