Can I freeze yogurt cheese?
I am doing a class next week on yogurt, yogurt cheese, panir cheese and 5 minute artisan bread. So, I am practicing different permutations of my tried and true, just to be able to offer options.
Last night, I made a batch of yogurt and added two cups of powdered milk, as recommended, for a firmer texture. I got exactly that! So, today I want to experiment with adding extra starter instead, to find a middle ground.
The current batch was really extra firm. I lined a colander, scooped the firm yogurt into it, and let it drain this morning. I have an excellent, really delicious yogurt cheese. I want to use some and freeze some. Has anyone frozen yogurt cheese? My frozen yogurt always separates the whey, but since most of the whey drained out, will that be an issue?
