My typical way of preserving stuff is to dehydrate then vacuum pack in mason jars.
But looking at a cross reference on another post, I saw that it is not safe to package things with 10% moisture due to botulism growing in a vacuum.
I wonder if the raisins I bought and vacuum packed are now not safe. I think they clearly more than 10% moisture.
Also I brought some brown rice and vacuum packed it- hmmm????

Has it worked for you so far? I would think the rice would be fine in just about any storage method, assuming it's already dry. I think anything too wet would mold, letting you know it's not okay. At least that's what happened to the dill seeds I had stored for planting this spring :)

The book I have on dehydrating and storing says that you can just store in a ziploc bag or a mason jar for up to a year without having to do any special sealing in them. They also note that if it gets moldy just toss it out, nothing about getting sick from it.

Would raisins, being fruity, even be attractive to botulism?
