I do agree with you though. I have a couple of slightly sharp knives and would love a sharp one! The job would get done faster! I may have to ask my ex husband for a couple of them back.:rolleyes:

You have to listen for the right sound. The metal makes a ringing sliding sort of sound when it's hitting the carbide blades just right.

Never been able to get an edge on a knife without one. And my cousin is a sushi chef, where sharp knives are mandatory! So I compromise :p

That is the sharpener I have! I got it at a restaurant supply store years ago. Works pretty good as a matter of fact.

Dont hide, sharpening knives is daunting the other way. :) I still would like to learn how though.
