Leaf Lard?

Lard is softer than tallow. Tallow used to be used for candles - it is really hard. Also used for soap. Less often used for baking now, though I suppose your average poor farmer of 300 years ago would use what they had.

So, how long does lard keep? I bought some lard rendered at a harvest festival last fall that I have in a coffee can in the frig.

Sniff test! Should be fine, though.

My question still stands! What's the difference between tallow and lard?

Tallow is made from beef suet and is very hard....lovely (the best, actually!) for deep fat frying and for soap making.
