Seems like such a waste to just compost them. Is there any way to use them. Chicken feed if cooked?

IME some are tougher and more fibrous than others. It's worth boiling or steaming a few of yours to see what they are like. In some cases they are tender enough to be used, slivered and boiled/steamed, in a curry or some such; or may be edible by chickens if cooked or if chopped and cooked.

I'm too lazy though - it's a lot easier to just let the chickens loose for the afternoon, or pick some weeds to chuck into their run :p
