Mashed Carrots

Am I the last person on earth to have heard of mashed carrots? 😅

I'm planning to try making them. I have white carrots from rainbow carrot bunches. I thought that would be a fun surprise for my family 🤣

First recipe I saw from google search

The closest thing I've ever came to mashed carrots was when my kids were smaller and I'd cook stew or soup with carrots and potatoes in it. My kids would mash the carrots into the potatoes (on their plate) and add lots of butter and eat it that way. That's because they "thought" they didn't like carrots for awhile but they would eat them that way. Later on, they continued the trend because they discovered they actually DID like carrots, lol.

I left my wet mashed carrots in the fridge uncovered because, well, I was lazy. I added butter, salt and nutritional yeast. It's not terrible! DS6 liked it. He loves carrots, so no surprise. DH says it reminds him of baby food. It must need more salt then?

It was not the worst thing I've ever cooked.

Sounds good. I like to mix mashed carrots in with mashed potatoes (any color and sweet) :) Also can make them sweet or savoy IMO

same here. will try about anything and i really like carrots (especially roasted ones with a chunk of roast beast and some taters, onions and mushrooms too).

i have heard of mashed parsnips and turnips before so i think this isn't a far stretch from that especially if you're using the white carrots.

Good idea! I canned carrots to add to smoothies with orange juice. So yummy, it tastes like summer! But I'm allergic to orange now, so I have this last jar of carrots sitting.

Canning carrots is so easy, if I could make mashed from canned and my family liked it, that would be perfect!
