I know I saw a post about this several days ago, but for the life of me I can't find it. I juices several pounds of apples little over a week ago, covered the jar and put it in the pantry. Today I noticed there is mold floating on the top. Can I just strain it off or is the whole batch ruined? What can I do to prevent it from happening again?

Are you sure it's mold? Mine got a thick layer of foamy stuff on top during the first two weeks. I use a paint stirring stick to agitate/oxygenate mine about once a week and the foam breaks up very easily. After three weeks I strained mine into another container to remove some of the solids and the foam is gone.

You might've read it on my winemaking thread. I had two small batches of vinegar go moldy on me. Definitely little islands of mold on top. It was made with the sludgy stuff that I racked the good wine off of, so it was probably not something I should've made vinegar from. I tossed it. It was only a half cup or so per batch.
