Lovin' The Homestead
4 cups strawberries
1/2 cup unsweetened pineapple juice
1 tsp grated lime rind
2 Tbsp lime juice
2 Tbsp dark rum
1 1/2 cups sugar
1 box fruit pectin
1. Crush strawberries in a large bowl, should have about 2 cups. Add pineapple juice, lime rind, lime juice and rum. Stir well
2. Combine sugar and pectin. Gradually stir into fruit mixtrue. Let stand for 30 mintues, stirring occasionally.
3. Spoon into clean jars or plastic containers. Cover with tight-fitting lids. Refrigerate up to a week or freeze.
Mine didn't set firm, but it sure tastes good on ice cream.
