I was wondering about the safety of some mango chutney that I canned, back when I first started canning, about 6 years ago. I know that they say the food inside isn't as fresh after it has been canned for a year, but I wasn't sure how long it would be safe for. In trying to find an answer I found an article about canned good safety that mentions some 100 year old canned goods that they found and tested. What amazes me is that the food was pretty much nearly nutritionally as intact as it was when it was canned, and perfectly safe. Anyway, I hope this helps someone else who may be wondering about the safety of some of the canned goods on their shelves.
