Red Wine Steaks for Two People

DS got this recipe from Nick Stellino's pbs show in the early 90's. Jon made it as part of an anniversary dinner he made for dh and I. It was funny watching Jon run from the living room to watch a portion of the show he taped and then back to the kitchen to work on the meal. I will post the rest of the recipes too. They are very good.

Red Wine Steaks for Two People

1 1/2 LB Marrow Bones - get good bones from butcher
2 Beef Tenderloin Steaks
1/4 tsp Black Pepper
1 T. Vegetable Oil
1 T. Butter
2 Cloves Garlic
3 T. Shallots
2 T. Parsley
1/2 c Red Wine
1/4 c Beef Stock
1/4 tsp Salt (opt)
1 tsp Butter mixed with 1 tsp Flour

Season steaks w/salt & pepper. Heat oil in very hot pan. Dice marrow. Brown steaks in pan 3 - 4 minutes on each side. Set aside in warm oven to keep hot. Discard extra oil. Put diced marrow, garlic, shallots, butter and parsley in skillet. Cook for few minutes, till shallots are soft and garlic is browned. Add red wine. Reduce by half on high heat. Add beef stock.
Return steaks to pan for few minutes.

any meal that has beef tenderloin....wow...sounds delish! you know I will be trying this and I have everything on hand except the marrow bones

I am sure I could delete this right?

Do I get your chef to prepare it for me too....I have a tv he can watch the tape on if he needs reminding on the recipe..HA HA HA

that was so nice of him to do that for you!!

you got dinner and a show---LOL
