Hello everyone!
I found this website from BackYardChickens.com and I'm so happy I found it! My husband and I moved from the city out to the country on 20 wooded acres about a year ago on our quest to self sufficiency. We absolutely love it and are learning new ways to be self sufficient every day.
We have a couple of beds we made in our garden for lettuce and herbs. The lettuce was getting really thick so we decided to thin out the seedlings. Of course we weren't going to waste them, so we made a salad from the thinned out seedlings!
We were getting to the end of our grocery budget for the month, so it really helped out to use up our lettuce and ingredients we already had in the pantry.

Does anyone else have a good way they use up plants that have been thinned out?
