Anyone have a tried and true delicious breakfast sausage spice mix? Not too hot, not too much sage...

Mine has a fair amount of sage but personally don't find it overwhelming.... Not spicy at all because we hate spice.

Hmmm...butchered 2 pigs and never made any ground meat or sausage. I like sausage but rarely cook it. I still have all 4 bacon sides from those 2 in the freezer. I'm slacking because I have all to do the rubs, etc. just not done it. Ahhh, I need a butt kick. I love bacon! Sure gonna want it when the tomato get ripe..BLTs yummy!...course, gotta warm up enough to even PLANT those tomato plants! Life's not always fun.

I like the versatility of ground meat. You can make your sausage or anything else! I feel your bacon pain @Mini Horses I've still got a side of bacon in the freezer too. Need to get busy!
